THE RAINCOAST
TEAM
The Chef at Raincoast Breads
From a young age, Kevin Hennig has been captivated by food, music, nature, plants, and ethnobotany. He began his professional culinary journey at 18 years old, apprenticing for his Red Seal in Culinary Arts under the guidance of the executive chef of Kelsey's Restaurants Canada. After nearly a decade of managing different restaurants for Cara foods and McDonald's, Kevin decided to go back to school and embrace his love for the arts, full time.
Kevin's passion for music led him to Simon Fraser University for a Bachelor of Fine Arts in Music Composition. His talent in music composition even earned him the privilege of composing for the Vancouver Symphony Orchestra.

In 2018, Kevin pursued his ultimate dream of opening his own restaurant that would reflect the unique identity of the Raincoast of British Columbia. Blazing a trail in Northern Oceanic cuisine, Kevin has established Canada's first restaurant to be permitted to forage for their edible compositions. With a definitive interest in defining the aspects of Northern Oceanic cuisine, Chef Kevin Hennig is on a mission to redefine the culinary experience in Canada.

Northern Oceanic cuisine, like any great art form, is complex and multi-layered. It transcends the mere consumption of food, incorporating elements of gastronomy, music, art, science, technology and design to create an all encompassing sensory experience.
The foundation of this cuisine is built upon high-quality ingredients, expert preparation and the art of eating. However, it extends beyond the plate to encompass the physical surroundings and ignite conversations on social and ethical issues.

A holistic dining experience requires the creator to consider both tangible and intangible factors, merging them into a cohesive whole that elevates the guest's experience. This is the central task of North Oceanic Cuisine: to offer guests an extraordinary, emotionally stirring experience that resonates with them long after the meal has ended.

Northern Oceanic Cuisine's birthplace is the mind of Canadian Chef and Restaurateur Kevin Hennig. He spent over a decade refining his Raincoast holistic approach to cuisine, which culminated in the creation of the Northern Oceanic Manifesto in 2023.

Hennig's vision is to change the world through gastronomy, using his thought-provoking, surprising, and humorous gastronomy as a vehicle to stimulate, engage, and delight. His cuisine is amplified by design, art, music, technology, and theatre, making it truly an immersive and unforgettable experience.
